Binitord: A Vineyard in Harmony with the Island

Tucked away in the sun-soaked southwest corner of Menorca, Binitord Winery offers more than just a wine tasting—it offers a story. What began as a humble hobby among friends has matured into one of the island’s premier boutique wineries and its only producer of Spain’s celebrated Vermut.

Binitord bottled its first wine in 2005—a rough start they admit with a smile—but by 2007, the team struck gold. Today, it remains family-owned and dedicated to small-batch excellence. With just 10 hectares under vine and an annual production of 35,000 bottles, the focus here is squarely on quality over quantity.

The winery produces 10 varietals—five whites and five reds—all deeply influenced by the island’s unique terroir. The calcareous soils, rich in chalk, sand, and minerals, lend a distinctive minerality to the wines. The vines, deliberately stressed by minimal irrigation, tap into underground seawater-fed veins. This natural struggle imparts intensity and depth, especially notable in their elegant Chardonnay, which delivers crisp acidity and layered complexity.

What sets Binitord apart is its symbiotic relationship with the land. Rather than control nature, the winemakers observe it. Wildflowers, bees, birds, and even spiders are seen as part of the vineyard's health. Regular ecological surveys are conducted to monitor biodiversity—happy insects and wildflowers mean healthy vines.

A standout feature of the estate is its partnership with the xòric, a native small hawk. These birds of prey help naturally regulate the population of grape-eating birds, maintaining ecological balance without chemicals or nets.

Harvesting is done entirely by hand in August by a tight-knit team of ten, many of whom work year-round at the winery. Post-harvest, grapes are cooled to 3°C to awaken dormant compounds, enhancing flavor complexity before fermentation. Each varietal ferments separately, at its own pace, following a philosophy akin to preparing a slow-cooked Menorcan oliaigu—never rushed, always thoughtful.

Aging takes place in both French and American oak barrels, never used longer than seven years, preserving the oak’s ability to influence the wine. Notably, 7,000 bottles a year are reserved for a signature blend of Cabernet Sauvignon, Merlot, and Syrah, aged for two years in oak and one in bottle—an exceptional cuvée for serious wine lovers.

A winery tour and wine tasting (1 white, 1 red and 1 vermut, paired with local cheeses and cured meat) are available in English on Wednesdays and Saturdays at 10:30am and in Spanish at 12:30. Tours in French coming soon! Make a reservation in advance
